Fried Calamari Po'Boy with Avocado and Black Chile Oil

This is a 'simple' sandwich. Simple, we guess, because it only has 3 (sorta) ingredients... plus a roll. It does take a bit of work, but it is very much worth it.

It comes from the cookbook 'wichCraft by Tom Colicchio of Top Chef fame. It is a fun cookbook with a lot of interesting sandwich recipes. Worth owning. We see that one of our favorite food sites, Serious Eats, has already reproduced the recipe, so you can find it here. Think NOLA by way of Mexico, given that this is basically a Po' Boy with nothing more than avocado and crispy fried calamari (squid, OK?) with a really tasty black chile oil. We make our own potato chips in the microwave to go along. We'll dip them in ketchup and Sriracha sauce... Thereby combining two of the most ubiquitous condiments in existence.
