Dungeness Crab

Having spent a week along the eastern seaboard eating lobster we came to the conclusion that we much prefer Dungeness Crab. In season it is readily available where we live in live holding tanks. We pick out big feisty ones and get them home quickly. What we also learned on that lobster trip was that we like steamed over boiled, so that's what we do with the crab. 16 1/2 minutes does it for us. Open 'em up, clean them out and chill. Coleslaw, sourdough bread and melted butter with lemon on the side.
