David Coffaro Vineyard and Winery Winemaker's Diary

Weeks 43 - 44
November 6, 2006 to November 18, 2006

I'll have more tomorrow, but I have to make a quick entry. I have started to taste some barrels and as always it is revealing. I tasted most of the cabs today and this evening I tried a few Petite Sirahs. The cabs are good, but the Petite Sirahs are great. If you are into Petite Sirah, THIS IS THE YEAR!!

Matt and I have started gathering the alcohols for all 325 barrels we have filled this harvest. It involves taking two ounces of wine out of every barrel and running an alcohol and a ph. So far we have finished most of the zinfandels and I am real happy to say that we have achieved a little over 14.6 on average. That is right where I want them to be. The acids on the zins were real nice also. We have started tasting the zins and I can safely say it will be another great year. After I gather all the numbers I can start deciding to choose which barrels go into our many wines. This will be one of my favorite times of the year. I may have a good idea by next week.
