Monday August 2, 2021....cool weather, vines are resting

OK, the big news we may be the first winery to harvest tomorrow, yes it will be Pinot Sparkling........

In the last few days there have been two people who walked on uneven ground to come over to the winery. They have to walk through two obvious signs saying " Please do not enter". We are responsible if they fall on this uneven ground. I know they are probably capable, especially more than I since I could not do what they do and walk in this area right off my office.

So Pat got upset that I yelled at this person today and so now I have to make a change.........that if someone moves through this uneven ground I should not yell or confront them, just let them make it over to the winery..........OR Pat will be upset all evening like tonight.....

Oh tonight, I tried out my new air fryer and I am happy

Last night I cooked the pizza too much so I need to try again and look at the video I posted last week........Wednesday, a new try.......

8:20, back from the vineyard to see Pinot and everything is ready for Pinot at 19 sugar overall..........for sparkling........we start at 6am

Tuesday August 3, 2021....hotter today, near 100

WE DID Harvest today.........A little over one ton for sparkling...The sugar came in at 20+ so we added water to correct to 19. Next we will do either Pinot for Red wine or somewhere out in the vineyard that would have 25+ sugar.

Catarino says there are mites in some of our Zin areas so I am off tonight to check out some Zin in the back of the vineyard

Back at 8:30, the son is down........I have to talk to Catarino when it is sunny so i can see if mites are there and then could we stop them someway??

Wednesday August 4, 2021....cooler today, vines rest

I tried my new method for pizza to night again and it still needs tweaking. It is too crunchy........so Dave........ of course .......

So the method is to take the dough First on the grill to make it seared on the bottom and then you turn it over and put all the nice stuff on the grilled side.........That makes it crunchy on both sides so I can put on a lot of other stuff on the first grilled side so I load up some pesto sauce and then cheese and then fresh cherry tomatoes so it is real juice on the top......of course there is olive oil........but crunchy, I like it, maybe a little less next Sunday........

We are having trouble with our Chiller so it is not working OK at times. Most wineries Cold stabilize white wine, a tradition. Before I got here I had some great wine from Dry Creek Vineyard. It was made from the settling, lees. So if you put a wine in the freezer at 45 degrees, the solids will settle to the bottom and then discorded. SOSOSO, does the settling solids have some character?

OK, there are many different solids in all grapes that are harvested and with Red wine we love the solids and most wine makers i know ferment them to gether making red wine. Now some Pinot is settle and I am not a fan of those wines.........let me make this clear, I think solids which may have insects, maybe even bird droppings, rare, but so little and this great other solids......Grape skins, seeds, are eliminated when white wine is made and also, they settle.............................

Then there is filtering.........almost all wineries filter their wine and strip character, my opinion.

Back at 8:15, The vineyard looks good and WHEN will the next day to Harvest?? I have to get some sleep and an IPO before😄............

Temp today was up to 99 and there is smoke from up North, causing us haze. My computer will be back on Monday...........this lap top is not easy to type in so I have asked Brad to post all my diaries unlit I have my new computer back.................thanks Brad.

NOTE from Brad: Turns out  the hard drive failure was due to something else in the PC which means the data was all there. Still good idea to back up from time to time!

Back to Dave:

I had a nice Rack of Lamb with roast potatoes below the Rack. It dropped some nice flavor on top of the vegetables. I also included mushrooms which could have been the best I have had recently. We also added onions and bell peppers........nice

Bryan and I went out in the vineyard and looked to see what will be next to harvest

Kate, Bryan and of course Pat and I were here for pizza and it was so good. three different pizzas

We are now going out for a walk......we will check sugars for the next harvest, so Riesling and and Muscat and Gewurztraminer and chardonnay and Viognier...........so many out there so we may not go to all?

8:30.............We did check all tonight, but Viognier and it looks like we could harvest white wine in two weeks. I am going to make one barrel fermented in a new French but most will be in neutral oak or mostly stainless.......thus no oak flavor

Monday, August 9, 2021.......... Brad copied what I sent him below, the new computer should be here tomorrow

So today was interesting, I have a wound again. I mentioned it  two years ago relating to the wound then NOW I have a new one. I think I got it when I went down a row that had vines hitting me and then I felt a vine that hit my left leg....sure I said to my self, no problem, it has not caused me a problem until now.

I saw the small hole was going deeper and there was swelling, not much, but it is painful when I move my left leg. So I went to this wound center and they are so slow, they want to make sure they do not make a mistake..so they looked at this deep wound and want me to come back for 2 or more weeks.

The wound is different since it is hurting me when I move my left food and it looks like it has a lot of swelling above the hole. So this wound doctor wanted me to see why I have less feeling at the bottom of my leg. I had Varicose veins removed more than 20 years ago and then 7 years ago I had 3rd degree burns on the same left leg so it is very sensitive to damage, even with a slight bump, or especially a sharp object like a grape vine.

Tuesday, August 10, 2021  warming up, yes I am back with my new computer, Brad has done a great job, but it is time for me to take over..............

I have this wound and I found some old pills that said 2017. It said it was an antioxidant so I asked the new people at the wound center and they said it was fine and may by slightly less potent. I can say the pain in my left leg is less now, but maybe I have had some Coffaro wine and will have some IPA soon after I go out in the vineyard.

I got a call today and it looks like they are going to input this box in my back in September.......more to come

Catarino thinks we could harvest White grapes next week. I told him we need a sugar test on Monday. OH, we have 3 or 4 new workers coming in on Monday to start preparing for Harvest. Catarino says the shortage of valued pickers is a problem. We are OK for now.

BTW, I sold some TSLA yesterday at a profit of course and I still have some short term trades to do..........AND my new Model S is delayed until February, good thing I have my Model S 100d which is now valued over 60k.....................

First of all I want to get in to Food, Pat and I always have a homemade dinner. We rarely go out.......Tonight we had Pompano Fillets so good, fried them at high heat to get some crispy on the skin.............

Catarino said today he thinks we will harvest white grapes next week, maybe I say so, I need 23 sugar and we will check next Monday where we think.  I am going out to check Viognier soon in the vineyard and taste, Bryan will be back tomorrow so we will check on our sugar...........So I am making a barrel fermented white...............

It is so much fun, I am back by myself, nice. So tomorrow night we need to do a sugar test on all whites, I am sure Bryan is ready...........

8 now, Bryan And I just got back checking the Viognier and we got 22 to 25 sugar, I want 23 so maybe Catarino is right, we will harvest something next week...........sugar test Monday.......IPA......now

Friday, August 13, 2021.......cloudy today again 88, Forecast is still 106 on Sunday, must clear up

8+ So Bryan, Kate and I just got back tonight and checked some of the other whites and they may be ready next week.........we are predicted to be up to 106 on Sunday so time will tell. I have a new French barrel coming next week so I will be ready to ferment Muscat, Viognier and Gewurztraminer together. It will stay in the barrel for 11 months, it will be toasty, maybe only to my liking?.......Bryan is bringing me a Pliny NOW

Pat and I had a nice pork stew tonight and I am getting ready for a Raider pre season game and of course the Giants are doing well which keeps Pat happy.

Update on the cat, he is doing the same, like dropping in front me OR just always where I want to go, laying long, he is a large cat!! So I still am capable to doge him, maybe he is making me live longer, but he still may out live me?...............?????

Now a Jaunt out in the vineyard!! TO taste some cheery tomatoes and some grapes..............

Back now after tasting Old Vine Zin and Riesling, both are soon to be ready..........

Sunday, August 15, 2021.........98 today again, too much haze, low 55 so vines are resting tonight

Bryan and Kate are not here this Sunday, very unusual but Pat and i had a great pizza, maybe cooked too much, on my turntable. If you look at the top there is a black object which is where the heat comes out. The turntable pizza cooker is great for cooking inside when like yesterday the temperature out side was close to 100 degrees and I did not want to cook on the BBQ..........

I am at a crossroads in my white wine. Recently I like oak in white wine and I tasted our Luminaire from 2019 and 2020 and to me they tasted similar, very tart............Like I said I am............after years enjoying wine with some oak and smoother so I am thinking..........

Maybe I should make three wines this year from white grapes and you know we will be out tomorrow doing sugar tests.........OK

I am thinking about making a wine that goes through M/L, Malolactic fermentation which will make the wine more smooth..........

OK, one white fermented in a French oak barrel, one wine which will also go through Malolactic fermentation and one wine which will have good acid like all our other Luminaire wines

8+, just got back and on the way out, I had forgotten........

We picked half our Pinot Noir grapes and we also make a Red wine, intense, not like those soft Pinot.......

 so my hands are sticky, I think Pinot red will be right after whites

So maybe I am a cheap IPA......I know what I like and if you want intense, Torpedo is great, but if you want more complex beer and pay a lot more, Pliny is nice..............but not as good after a lot of wine.............

Monday, August 16, 2021.........Finally it got hot today, 105 not too much haze, low 55 so vines are resting tonight?

OK, there has been a lot today to report about the harvest, but first I have to say something about politics.........like Monday Morning QB........seriously I have heard today people I respect that say Biden should have known!! SO why did they not predict what happened, it is so complicated and I am glad we are out of there, We can not be the Policemen of the World!!!!!!!!!

Now to what is happening here, there was an Egert here all afternoon, great bird..........this great bird who lives in our pond but moves out sometimes to find other things, like grasshoppers and rodents.........I digress..........

Aug 16 pizza

So the sugar tests came in today and on average we got about 22 sugar so we are going to wait until next Monday to harvest all our White grapes. I am still thinking of Luminaire, Lot one, lot 2 and lot 3 and I will have more to say about those 3 wines when we harvest,.

BTW I did get rid of the Foodi, I guess I am not intelligent to figure out the system??? It did not make good anything!!!!!!!!!! So tomorrow when Pat is gone I will fry the traditional way.......more tomorrow on what I will fry.........

Pat is off to see Giants games and will be back on Friday.

I just got out to see what is happening in our Cab Franc and Peloursin........We need a few weeks, tart, but interesting..........

My Tesla Model S is not doing well, no air, I have to go down next Wednesday for a service call..........

My wound doc said I am doing well and I will go back next week. The bandage they do is already coming off so I need to tape to keep it in touch with my sore............

I mentioned before only one time that I did have an air Fryer. I could never get it to work well so I sent it back.........

My Tesla Bond was called yesterday so I bought a lot of stocks....I have 280k to invest. I only buy stocks I use so I bought 150 shares of Costco and 100 of Apple and of course TSLA........

Just got back to taste some tomatoes and grapes.........It is an experience to taste very tart fruit......it keeps me alive


Wednesday, August 18, 2021........down to 87 today, grapes get a rest

Catarino thinks we should spray for Mites, they are the little bugs that like to eat the green color out of our Zinfandel..........BUT

The damage has been done as far as Kate, Bryan and I saw tonight. We did not go down to the Zin that is back in the top corner of the property which is younger vines and is used for our Block 6. What is interesting, there in that part of the vineyard there are about 10% Petite Sirah vines intermingled with the Zin and they do not have any indication of mite damage. Yes as long as I have been here, I have never seen damage in any Petite Sirah SO why???

I continued to buy stocks today. I had all this cash and I saw I could only get 1.5% now on bonds so I bought stocks for the long term so I may do better.

Friday, August 20, 2021........down to 80 today, grapes get a rest

Yesterday Catarino and I looked at the stressed vines in the First Block which usually go into our Block 4 wine. That is one of the sections Catarino said had mites. And as I said Kate, Bryan and I could not find anymore mites, they had already done their damage.........so Catarino did a test and the sugar came in at 19 sugar. Let me make this clear, without green in those leaves, the fruit would not get up to 24 sugar which we need for our great Block 4. To make this short, we picked and we did have enough damaged grapes to make a barrel of sparkling Zinfandel, it will be exciting, yes the sugar came in at 19 sugar, perfect for sparkling but not for red wine in the future..........
