We are back bottling wine today. I will have more to say about my tasting notes from last week later today or tomorrow............

9:00 pm: So it was a Monday, I work every day but I understand, employees after two days off so it took a little time to get organized again.........

In two more days all our 2014 16 month wines will be bottled. Tonight I tasted the non vintage DC Fusion and was amazed it tasted better. So I have to find that first pallet we bottled last Tuesday. Let's call it lot one. I asked our great employees to take two 2013 barrels down last Monday to prepare for bottling on January 19. We bottled only 50 cases, mainly because we wanted to make sure the bottling line worked well. It was a good thing to do, since we had several problems, but in the end we had the First lot of DC Fusion bottled. So today, 6 days later, we bottled the rest of DC Fusion non vintage, about 190 cases more, so that is what I mean: I have to find a bottle of DC Fusion, bottled 6 days ago to compare to the one I had tonight because tonight's tasted heavier.........

I have tried many 2014 and 2013 wines in the last few days. I will have more info tomorrow

Have you ever thought about past times when an experience has never left you? I have several. I keep thinking of several times again and again. Several years ago, I know I did not want to think about the past, mainly to me, wasn't important, but I am happy to say, I think more about my past. ...............

Sure in the past diary entries, way back in 1998 when my first post, I said I do not like to look back on the past, I want to think of the future, but the past is interesting and may make me think more...........I always want to think, even when I am asleep, as I      said...............

My Mother and Step Father, Larry, were real nice to us and we would go off to Santa Cruz, Lompico, Santa Cruz Mountains where I could make one out of two horse shoes on a ringer. It was easy after two or three hours practicing. These expert horse shoe people in Lompico were the best I have ever seen....I was 15 years old, I knew they were much better than I. I still remember having great times with all the people in the Santa Cruz Mountains when I was in my teens..............

Tomorrow I may start with another memory, one way back up here in my late teens...........

8:00 Pm: A lot of things are complicated, I hate typing and spelling so it takes me a long time to finish a diary......It is very complicated for me, it takes too much time..............

It is also complicated to bottle wine. Sure when we get organized like we have in the last week, all the employees are out of here by 4, sure they come in at 7or so about 8.5 day..........

But for me it is hard work, but hey I love it because I have to control myself.......hard with sometimes 20 bottles open, like all the wines form last week and more in the last two days............I have to sip and pour a lot

Tonight, I wanted to make sure I tried the Lot one and Lot two of our first DC Fusion non vintage. So read back but we bottled two, one a week later. I tried both today and I preferred the one bottled yesterday. It was more vibrant, wow, I hope you know I like young wines, so the one bottled a week ago was much smoother so I think we have a good wine...........

I found similar results with the many wines I tasted in the last week. Like, I tasted Escuro, 2013 and 2014 from last week. Tonight I found them equal and smoother of course while last Friday I found the 2014 after bottled two hours earlier to be harsher,,,,,,,,,,wow Dave..........Sure i know, It is my way, to always leave open wine for 4 or 5 days and I really guess how it will develop. So far i think 2014 is still right up there with 2013 and 2012 is perfect now...........

I need a vacation, we finish tomorrow.............

9:00 Pm: This diary is for me, sorry       ssoo          Morton's Hot Springs.....I heard it sold today again.......WWOWWOO  My Mother and Larry brought us up to Morton's a few times about 30 miles from San Francisco where I lived. It is cold still in San Francisco all year around except maybe 5 days. I grew up there in the 50's and 60's. I was lucky to have Larry and my Mother drive us up to warm weather. Morton's was very fun with a nice controlled creek to swim in. In 1960 I went to Morton's with a new Girl Friend, Sharon. It was one of our first times together. There were no dates then for us.

Sharon, was my first love. She was Spanish and beautiful like Pat who is Portuguese. Sharon and I were at Morton's in 1960. She was 16 and i was 17. It was so much fun, a warm evening which we rarely had in San Francisco..........I remember after that we were inseparable for 2 years........

But at the evening at Morton's I was off by myself for awhile and I found a few new people and there was a little music, maybe not, but this nice looking girl about my age, said i looked like Elvis. Now as some of you know I liked Elvis's singing, but I knew I could not compete with his looks. I combed my hair like his, but I was not a fan of his movies and a lot of else, I was fascinated in this new girl, but then

I did have a hair dooo like Elvis, but I wasssss not as good looking as him so it was nice to hear. Then all of us got talking more, especially the girl I met that night and then Sharon showed up. I am hoping I remember grumbling but I had to go off..........home, I had no control................I still wonder what would have happened if I had a chance to know the mystery girl..........still things in my mind, far many more...............
