Catarino brought in a sugar test on our remaining Pinot Noir for red wine. He thinks there is a little over a ton which should produce at least 50 cases. The sugar yesterday was 23.6% (Brix) and we want 25+. We will get a bigger sample Thursday and probably harvest Friday. I want to give everyone a day off on Monday, Labor Day, so if we don't pick Friday, Tuesday will be our target date. The Pinot fruit looks great.
