David Coffaro Vineyard and Winery Winemaker's Diary

 January 9 - January 22, 2011

Wednesday January 19 2011

Our blending of the 2010 wines went well and I have tasted many of our wines. The wines I tasted are extremely intense and definitely not balanced at this time. As I have mentioned before the wines are high in acid and we are hoping oak will help them fill out. Right now they are extremely fruit forward with good upfront acid. The complexity is there and my first estimate is that these wines will take a long time to reach their potential. Aging for 10 years will be no problem.

Today we started bottling wine. We have finished bottling our 2010 Estate Sauvignon Blanc without labels (The labels should be here at the end of March) and have also bottled our 2009 The Ultimate Cuvee. Later today we will bottle three more of our 2009 wines aged for 16 months. I will have fun tasting them tonight and I will report my impressions later this week.
