Time passes...........

As most of you know I have used alternative closures for ALL of my wines since 1994..........yes some wineries are using alternative closures for their white or lower priced reds

Matt and I tasted over two days two wines.............

One wine was 2010 Zp2c sealed with our tin liner as usual........This Zp2c wine which most of you have tried, is a blend of all wines, this one from the 2010 vintage. This wine aged longer and was lowered in acid ........the 2010 vintage....was ........scorched..........look it up in my diary if interested..........this wine was fine after 4 years

The other wine was the same bottled 2010 Zp2c but with a different alternative closure. There was a nice guy come in to convince me to try this new closure so I said sure, give me 24 bottles and I will bottle them and see what we have............

This questioned closure is more plastic and has a plastic liner. Most people prefer this plastic liner over our TIN liner. SO2 is a preservative but it does keep wines fresh, like vegetables in super markets use it to keep their produce fresh. Of course I think it is fine because it dissipates fast..............We use very little........30 Parts per million at bottling

As you can imagine, the black cap with the plastic liner had no SO2 left which means it may not age long??? We can debate this? The plastic liner does let in more air and matures the wine quicker and then the wine loses fruit and becomes more smooth. Also we have to consider this closure was different than our regular cap which means it was more plastic. Most wineries are trying our normal Stelvin closure with this plastic liner and not our tin liner and they are happy with the results. I have some more wines in my cellar that I hope I can find. I did an experiment in 2004 or so with plastic and tin liners and I will try to find them tomorrow.........

The bottom line is very interesting to me and other wine lovers:

Our wine sealed in a tin liner had plenty of SO2 left and tasted fruity. The wine aged in the plastic liner tasted more smooth SO what do you want? A lot of consumers want smooth less harsh wines so maybe the plastic liner is better for those who like wines to drink right away? I prefer fruit and lively wines..............
