2012 Harvest has started. We are all exhausted, but I am mostly stressed out. There obviously is a lot of responsibility to harvest at the right time. Today we picked 1.25 tons of Pinot Noir for sparkling wine. The grapes came in at a sugar of 20.2 and a PH of 3.1 which is right where we want it. We dumped whole bunches into our press with an elevator. Check out the pictures. We also took pictures of us all consuming some sparkling wine to toast the beginning of Harvest. Sauv Blanc should be next, either Monday or Tuesday. |
